  1. 01

Make burger sauce by combining the thousand island dressing and chipotle in adobo.

    • 1/2 cup Thousand Island dressing
    • 1 tablespoon Chipotle in Adobo
  3. 02

Create 4 patties with the ground beef. Top 2 of the patties with 2 tablespoons of shredded cheese, centered on the patty. Season the beef and cheese.

    • 1 pound Ground Beef (E3 Meats) (Makes 2 juicy Lucy’s)
    • 1 tablespoon Kosher salt
    • 1 teaspoon Black pepper
    • 4 tablespoons Shredded pepper jack cheese
  5. 03

Next, place the plain patties on top of the patties with cheese and crimp the edges, making 2 stuffed burgers. Crimp firmly enough to trap the cheese in the center.

  6. 04

    Season the burgers

    • 1 teaspoon Black pepper
    • 1 tablespoon Kosher salt
  8. 05

Place a griddle smooth side up on the highest level of the flexible cooking rack . Put a grill grate at the same height on the other side. This will allow you to cook the grilled cheese sandwiches and caramelize the onions on the griddle and sear the burgers over the flame on the other side on the grill grate.

  9. 06

Slightly oil your griddle and caramelize your onions.

    • 1/2 Yellow onion, sliced and caramelized
  11. 07

Place a nob of butter on the griddle and grill the cut sides of the buns until toasted.

    • 4 Burger buns (top and bottom made into grilled cheese)
  13. 08

Stack each bun top and bottom together with shredded cheese between the layers, so each bun becomes a grilled cheese sandwich. Stack 2 buns with the bottom cut-side down and the top round side up. Stack remaining 2 buns with both the bottom and the top cut-side up.

  14. 09

Grill sandwiches until cheese is melted, then remove from griddle and set to the side.

  15. 10

Slightly oil the stuffed burgers. Place the stuffed burgers on the grill grate and cook for 2 minutes dome down. After 2 minutes, flip and continue to cook for another 2 minutes or until you reach your desired internal temperature.

  16. 11

Top burgers with shredded cheese and allow it to melt.

    • 2 cups Pepper Jack cheese, shredded
  18. 12

While the cheese is melting and the dome is closed, build the burger bottom as follows: Bottom Bun (Grilled Cheese), Sauce, Bibb Lettice, and seasoned tomato.

    • 4 tablespoons Burger sauce
    • 4 Leaves Bibb lettuce
    • 2 Slices of tomato, 1/4 inch thick
  20. 13

Open the draft door and Kontrol tower, burp the grill and open the lid slowly.

  21. 14

Remove burgers from grill and place on top of prepared burger bases.

  22. 15

Top burger patties with caramelized onions and a sauced top bun (second grilled cheese)

  23. 16

    Enjoy with lots of napkins!
