    Preparing the Pellet Joe

    In a saucepan, melt 1/2 cup of butter over medium heat. Stir in the brown sugar until it's fully combined and slightly bubbly.

    Pour the butter and sugar mixture into the bottom of a greased 9-inch round cake pan.

    Arrange the pineapple slices on top of the butter-sugar mixture. Set aside.

    Pour the cake batter over the pineapple slices in the cake pan, spreading it evenly.

    Place the cake pan on the preheated Pellet Joe, making sure it's set up for indirect cooking. You can use a heat deflector or place the cake pan away from the direct heat source.

    Close the grill lid and smoke the cake for about 35-45 minutes, or until a toothpick inserted into the center comes out clean.
