Tie rib roast with butcher twine to prevent cap from lifting off during cooking.

Season liberally with kosher salt and pepper.

Plan on roughly two hours of cooking to reach 128F internal for medium.

One hour in, mix together potato ingredients and place underneath spinning roast to catch drippings.
