In a pan over medium heat, cook diced bacon until crisp. Remove and drain on paper towels. Discard excess grease, then add all remaining jam ingredients along with the bacon. Simmer and stir often for about 45 minutes, until reduced to a thick, jammy consistency.

Form the ground beef into four loosely packed 4 oz balls. Mix salt, pepper, and garlic powder to create an SPG rub.

Using a mandolin or sharp knife, slice the white onion into very thin rings.

Stabilize your Kamado Joe Classic II at 425°F. Insert the Karbon Steel Griddle and allow it to preheat for 10 minutes.

Butter the hamburger buns and toast them on the griddle until golden, watching closely to avoid burning.

Place a handful of thin onion slices on the griddle, followed by a beef ball. Smash the patty flat over the onions and hold for 10 seconds. Season with the SPG rub.

After 2 minutes, flip the burgers, add a slice of cheese to each, and cook for 2 more minutes until melted.

On the bottom bun, spread warmed chunky peanut butter, stack both patties, top with a generous spoonful of strawberry bacon jam, and finish with the top bun smeared with more peanut butter.
