    Trim down layer of fat on brisket to ¼ inch left of fat. Remove membrane off brisket.

    Coat brisket with oil and season with paprika, garlic powder, onion powder salt and pepper. Ensure all areas of the brisket are covered with seasoning.

    • 1/2 cup Coarse black pepper
    • 1/4 cup Coarse salt
    • 1/4 cup Paprika
    • 2 tablespoons Onion powder
    • 2 tablespoons Garlic powder
    • Oil

    Double wrap brisket with plastic wrap. Let brisket sit for at least two hours. Best dry brined overnight.

    Soak your wood chunks for 30 minutes. We recommend pecan, hickory, oak, apple, and/or mesquite.

    Start in automatic mode. Add charcoal to the firebox. Close the button bottom vent fully and dome. Power on your grill with the switch on the rear. Power on your controller. Set your temperature to 225˚F. Press the AFS (automatic fire starter) button to engage the element to ignite the charcoal. The element is ON when the red light is glowing. The element will stay on for 15 minutes.

    Once warm, place brisket on the grill fat side down. You will want to put the brisket on for 1 1/4 - 2 hours per pound.

    Mix apple cider vinegar and apply cider in a spray bottle and spray brisket after two hours. Spray periodically, every 30 minutes to an hour, after.

    Should be at an internal temperature of 180˚ when removed.

    Press and hold the AFS button to turn the element OFF.

    emove and double wrap with aluminum foil and then wrap with a clean towel. Let rest for an hour.
