These Cajun butter venison skewers are proof that wild game doesn't need to be complicated to be incredible. Tender cubes of venison tossed in a bold Cajun spice blend, threaded onto skewers, grilled fast over high heat on the Kamado Joe, and basted with a rich garlic Cajun butter that melts right into the meat as it cooks. The whole cook takes 10 minutes from skewer to table. Perfect for a quick weeknight dinner, a hunting camp meal, or any time you want serious flavor without serious effort.

    Trim any silver skin from the venison and cut into even 1½-inch cubes. Keeping the pieces uniform in size ensures they cook evenly on the skewer and every piece comes off the grill at the same time. Place the cubed venison in a large bowl and toss with olive oil, Cajun seasoning, smoked paprika, black pepper, garlic powder, onion powder, and salt. Mix thoroughly until every surface of every piece is evenly coated. For deeper flavor, allow the seasoned venison to marinate for 20–30 minutes before threading the skewers.

    Thread the seasoned venison cubes onto skewers, leaving a small gap between each piece. The space allows heat to circulate around every side of the meat rather than steaming the contact points, which is what gives you a better sear and more even cook across the whole skewer.

    Melt the butter in a small saucepan or cast iron over low heat. Add the minced garlic and cook for 1–2 minutes until fragrant. Stir in the Cajun seasoning, fresh lemon juice, and crushed red pepper flakes if using. Keep warm and set aside for basting. The butter should be loose and pourable — if it starts to solidify, place it back over low heat for a moment before using.

    Set your grill up for direct grilling at 425–450°F and allow it to fully come to temperature before adding the skewers. Lightly oil the grill grates to prevent sticking. A fully preheated grill is what gives you the immediate sear that locks in the juices and develops char on the outside of the venison.

    Place the skewers directly on the grill grates over direct heat. Grill for 8–10 minutes total, turning every 2–3 minutes to develop even char on all sides. Brush generously with the Cajun garlic butter each time you rotate the skewers, allowing the butter to baste into the meat as it cooks. Venison is best served medium rare — pull the skewers when the internal temperature reaches 130–135°F. Venison is an extremely lean meat and will dry out quickly past medium rare, so do not overcook it.

    Remove the skewers from the grill and transfer to a serving plate. Drizzle any remaining Cajun garlic butter over the top and finish with a scatter of fresh chopped parsley. Serve immediately.
