Using the Big Joe® Grill - Series III, these hot dogs are scored for perfect caramelization, topped with a crispy grilled cheese bun, and finished with colorful bell pepper confetti. Quick, fun, and full of flavor, they’re the ultimate festive treat for backyard parties or family gatherings.

Using a sharp knife, lightly score each hot dog at an angle. Rotate and repeat to create shallow cross-hatched marks. This helps with caramelization and holding toppings.

Preheat your grill or Kamado-style cooker to 500°F. Lightly oil the griddle or grill surface so the cheese doesn’t stick.

Place the scored hot dogs directly on the grill. Cook, turning occasionally, until they develop light char and the scoring opens up, about 5–7 minutes.

Sprinkle about ¼ cup shredded cheese directly onto the oiled grill surface for each bun. Let the cheese fry until the edges are golden and turning slightly translucent. Place a bun cut-side down on top of the melted cheese, gently press to adhere, then lift with a spatula once crispy.

While the dogs cook, thinly slice the red, yellow, and green bell peppers into matchstick-style “confetti.” Toss together and season with ¼ teaspoon salt.

Add relish to each cheesy bun if desired. Place a grilled hot dog inside, top generously with pepper confetti, and finish with mustard or preferred condiments.
