Kamado Joe Questions et réponses avec James Bennett

What inspired you to start barbecuing? How long have you been doing it?
I have been barbecuing for a long time. I started off where a lot of people did, with a propane grill. It was easy fast and accessible. However it did not product the best results. Then I fell into a YouTube hole of people smoking BBQ and grilling with charcoal and I was hooked.
What advice would you give to someone new to grilling? Do you have any advice for a new content creator in the BBQ space?
Don't be afraid to fail, because you will. Just make sure you learn something each time and apply it to your next cook. As a creator my best advice is just to film as much as possible. Don't worry about equipment, scripts or anything. Just film, and get in the reps. You will be terrible at first but just like cooking apply what you learn to your next shoot.
What is your favorite grilling technique that you've learned and why?
I am a HUGE fan of the reverse sear technique for cooking a steak. I have had the best, repeatable results with it and it is my go to method when I want a really good steak.
What is your favorite recipe?
My favorite recipe is Filipino Lechon Belly, without a doubt. It is as close to a whole roast pig that you can get without having to dig a hole!
Anything else you'd like to share?
Have fun! That will come through in your food and your videos.
