Start by preparing your Pellet Joe for smoking. Fill the hopper with your choice of wood pellets. Preheat the grill to 350°F (175°C) for indirect cooking.

In a saucepan, melt 1/2 cup of butter over medium heat. Stir in the brown sugar until it's fully combined and slightly bubbly.

Pour the butter and sugar mixture into the bottom of a greased 9-inch round cake pan.

Arrange the pineapple slices on top of the butter-sugar mixture. Set aside.

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Beat in the eggs, one at a time, followed by the vanilla extract.

Gradually add the dry flour mixture to the wet ingredients, alternating with the milk and pineapple juice. Begin and end with the dry ingredients, mixing until just combined.

Pour the cake batter over the pineapple slices in the cake pan, spreading it evenly.

Place the cake pan on the preheated Pellet Joe, making sure it's set up for indirect cooking. You can use a heat deflector or place the cake pan away from the direct heat source
