Stabilize your grill at 400°F and set up for a direct cook. Place a 10” cast iron skillet on the grill surface and bring it to temperature.
Heat olive oil in the cast iron skillet and add the chopped bell pepper & onion and cook for 5 minutes, or until the onion becomes translucent.
Add garlic and spices and cook for an additional minute. Then, add the chopped tomatoes (optional: slice in half and grill for a bit of char). Season with salt and pepper and bring the sauce to a simmer, allowing everything in the pan to cook together and break down for an additional 5 minutes.
Use your large spoon to make small wells in the sauce and crack the eggs into each well. Place dollops of goat cheese over the dish. Cover the pan and cook for 5-8 minutes, or until the eggs are done to your liking.
Remove the cast iron pan from the grill and garnish with chopped cilantro, parsley, avocado and toasted baguette.
