In a large pot simmer together brine ingredients until sugar and salt are dissolved. Allow to cool.
- 3 Cans of Beer
- Brown Sugar
- Cayenne Pepper
- Black Pepper
- Granulated Garlic
- Granulated Onion
Pour brine into a resealable bag and place ribs inside.
Allow ribs to brine for 6 hours or overnight.
Prepare ribs. Remove the membrane on the back. Place in foil.
Remove grates and place drip pan on heat deflectors. Add grates.
Start in automatic mode. Add charcoal to the firebox. Close the button bottom vent fully and dome. Power on your grill with the switch on the rear. Power on your controller. Set your temperature to 325˚F. Press the AFS (automatic fire starter) button to engage the element to ignite the charcoal. The element is ON when the red light is glowing. The element will stay on for 15 minutes.
Once grill has reached temperature, set ribs on grill for 2 hours.
Remove ribs from grill. Apply favorite BBQ sauce to ribs.
Cook ribs for 5 minutes per side.
Press and hold the AFS button to turn the element OFF.
Allow ribs to rest. Add additional BBQ sauce if needed.
