Instructions

    Preheat your Pellet Joe smoker to 250°F.

    In a large bowl, combine the ground bison, Italian sausage, diced bell pepper, onion, poblano pepper, garlic cloves, cheese curds, bacon, bread crumbs, eggs, Worcestershire sauce, and 4 tablespoons of salt, pepper, and garlic powder. Mix well.

    Place the mixture on a cooking tray or wire rack and form it into a meatloaf shape.

    Place the meatloaf on the smoker and cook at 250°F.

    While the meatloaf is smoking, make the glaze by combining ketchup, BBQ sauce, apple cider vinegar, and 2 tablespoons of salt, pepper, and garlic powder.

    Once the internal temperature of the meatloaf reaches 140°F, generously glaze the meatloaf on all sides.
