    Set up Kamado Joe for indirect cooking, 225F, with 3-4 wood blocks of your choice. We typically use maple and fruit wood for pork.

    Place aluminum foil pan underneath grates to catch drippings and make clean up easier.

    Score the fat cap of the pork butts in a cross hatch pattern.

    Season liberally with your favorite bbq rub and rub into every part of the pork butt.

    Smoke until thermometer in deepest part of the pork, but not in contact with the bone, registers 203F, approximately 16 hours.

    If needed sooner, can bump temperature to 250-275F.

    Once internal temperature is hit, remove from heat, wrap in three layers of aluminum foil and hold in a cooler wrapped in beach blankets for 1-4 hours.
