Blackened Salmon Open Faced Sandwich

    Stabilize your grill at 425F. Set up for a semi-indirect cook utilizing 1 half-moon deflector shield. Place a grill grate at the highest setting over the d eflector shield. Combine the oil, garlic, tomatoes and herbs in a grill safe pan and place on the indirect side of the grill. Close the dome and allow the oil to soften and cook everything together for 20 minutes. Remove the tomatoes and garlic. Use a spoon and make a spreadable paste and reserve for later use. Use the flavored oil to season the bread and toast it off on the grill.

    • 1 cup Olive Oil
    • 4 Cloves Garlic
    • 10 each Cherry Tomatoes
    • 4 Sprigs Oregano
    • 1 Sprigs Rosemary

    Season the salmon fillet, slightly oil and place on the direct side of the grill. Close the dome and cook for 1 minute, flip and cook for 1 more minute. Remove the salmon and toast from the grill and spread the tomato garlic mixture on top of the toast. Break apart the salmon and top the toast then garnish with scallions and enjoy!
