Easy to prep and packed with flavor, this recipe turns wild turkey into bite-sized perfection—wrapped in bacon, stuffed with cheese and jalapeño, basted in sauce, and kissed with smoke.     If using wooden skewers, soak in water for 20-30 minutes prior to using.

    Preheat your Kamado Joe to 350 degrees, setting it for indirect cooking with a heat deflector if needed.

    Trim the wild turkey breast of any fat or unwanted pieces. Then, cut into one-inch pieces.

    Toss the wild turkey cubes in olive oil, then generously coat with the barbecue rub.

    Lay a bacon slice in an X shape. Place a cheese square, a jalapeño slice, and a seasoned turkey cube in the center. Fold the bacon over to wrap tightly, securing with a small skewer. Thread three of the bacon-wrapped pieces per skewer for easy grilling

    Place skewers on the grill over indirect heat. Brush with barbecue sauce every 15 minutes. Grill for 25-30 minutes, or until the bacon is crispy and the turkey reaches an internal temperature of 165°F.
