Season the scallops, oil the cast iron griddle that has come to temperature and place the scallops on to sear. Sear for 45 seconds and flip. After another 45 seconds, transfer the scallops on top of each dollop of avocado Crema.
- 5 Each Scallops (10/20 Dry Pack if possible) Sinew Removed
- 1 Each Avocado Ripe
- 1 Teaspoon Honey
- 1/2 Teaspoon Lanes BBQ Nami
- 1 Teaspoon Dijon Mustard
