    Set up Kamado Joe for 300F with the JoeTisserie and coals banked up the back for even cooking.

    Tie rib roast with butcher twine to prevent cap from lifting off during cooking.

    Season liberally with kosher salt and pepper.

    Plan on roughly two hours of cooking to reach 128F internal for medium.

    One hour in, mix together potato ingredients and place underneath spinning roast to catch drippings.

    Remove potatoes when skin wrinkles, about one hour.

  7. 07

    When roast reaches 128F internal, remove from heat and rest for 30 minutes.

    Mix together horseradish sauce ingredients and keep in fridge, can be prepared days ahead of time.
