This Texas Smoked Meatloaf is a cozy, flavor-packed twist on a holiday classic, smoked to perfection on the Big Joe® Grill - Series II. Juicy and tender, it’s layered with sautéed sweet peppers, onions, jalapeño, and garlic, then glazed with a mix of BBQ sauces for a sweet-and-smoky finish. Perfect with creamy mashed potatoes and steamed greens, it’s a meal that feels like a warm holiday hug, whether for a weekend cookout or a chilly evening at home.
Instructions
-
01
Whisk together the eggs and milk in a large bowl. Add the Stove Top stuffing and let it soak while you prep the veggies.
-
02
In a skillet over medium heat, sauté the diced sweet pepper, onion, jalapeño, and minced garlic until soft and fragrant — about 5 minutes. Add to the stuffing mixture.
-
03
Add ground beef and Greek seasoning to the bowl. Mix gently by hand until evenly combined — don’t overmix!
-
04
Divide the mixture into two aluminum bread pans, pressing gently to form even loaves.
-
05
Preheat to 325°F for indirect heat. Place pans on the grates and smoke for 1 hour 15 minutes, or until internal temp reaches 160°F.
-
06
At the 30-minute mark, brush the tops with the glaze mixture (ketchup + Kinda Sweet BBQ + Southbound Sauce). Let the glaze caramelize beautifully.
-
07
Remove from the pans, slice into thick 1-inch pieces, and serve over a bed of creamy homemade mashed potatoes 🥔.
