Loaded with tender, juicy beef, sautéed peppers and onions, and melted cheese, these sandwiches are packed with flavor. Preheat Kamado Joe with 1/4-1/2 firebox full of charcoal and warm griddle for at least ten minutes before cooking.

Prepare all ingredients and set near the grill so you can move quickly and efficiently.

Add ghee, or oil of your choice, to the griddle.

Cook onions first for 5 minutes until golden, then add mushrooms. Flip frequently until cooked, adding in ghee, kosher salt and pepper.

Remove veggies from heat and add the steak, seasoning them on the griddle with kosher salt and pepper.

Cook until browned, flipping frequently, about 10-15 minutes.

Add mushrooms and onions back in and top with provolone. Melt and incorporate.

Top mixture with more provolone and put bread directly on top, using a spatula to flip the sandwich over.
