Looking to gamify short ribs, try Angus Wings also known as Kalbi Flanken Ribs! Many of you know that short Ribs are one of my all-time favorite cuts of beef. By slicing them thin across the bone we are able to transition what is typically a low and slow cut of beef into a big bold quick-sear appetizer in under 30 minutes. Please Enjoy!

Instructions

  1. 01

Stabilize your grill at 500F and set up for a direct cook.

  2. 02

While the grill is coming to temperature, place your flanken style ribs in a non-reactive container and pour in your marinade. Today I have chosen a bath of “Sweetwater, Tres Chilies”. Combine the ribs with the bath and marinate for no shorter than 30 minutes and no longer that 3 hours.

  3.

    Ingredients

    • 2 Pounds E3 Beef Kalbi Ribs
    • 1 Bottle Sweetwater, Tres Chilies Fajita Bath
  4. 03

Place the ribs directly on the grill and sear for 3 minutes on each side. Turn to manage caramelization. Feel free to turn and move as they cook. This is generally a lid up cook but feel free to close the dome and smoke with their own drippings.

  5. 04

Remove the grilled ribs from the grill and transfer to a cutting board. Slice between the bones and serve as small bite appetizers right off the grill!
