Whole Packer Angus Beef Brisket
* Preheat full fire bowl KJ lump to 210-225
* Add 5-6 large mesquite chunks to fire bowl
* Set heat deflector in place
* Cook fat cap up
* 190 deg. internal temp @ point end of meat
* Remove meat & wrap in foil.
* Place meat in cooler to rest for 1 hour
* Slice thin across grain, sauce, enjoy!
