I tride this method with meat side down. Bad idea. Ribs were dry. I have done similar recipe 6 times w bone side down and they were much better. Meat side down was dry. Bone side down for three hours works much beter.


3 slabs of baby back ribs( Sam's or Costco)
1 tsp cayenne
1 tbsp salt
1 tbsp garlic powder
1 tbsp onion powder
2 tsp cumin
2 tsp coarse grd. blk. pepper
1 tbsp brown sugar


Peel Membranes off back side of ribs. Wash thoroughly. Mix all spices together well and rub each slab well on both sides about 12 hours before grill time and wrap up in saran wrap getting all the air out. Prepare grill at 250 degrees with Heat Deflector and wood chips for smoke. Place Meaty side down on grill and cook for 2 hours. Wrap individual slabs in aluminum Foil, cook on other side for 1 hour, let rest for 30 minutes and serve with your favorite sauce.
