Oregano and garlic grilled leg of lamb

This is a very easy tasty lamb BBQ recipe that i love to make and would LOVE to try on a Kamado Joe!

5-6 lb bone-in Leg of Lamb
3 cloves Garlic, minced
4 cloves Garlic
2 Tbsp Lemon Zest
3 Tbsp fresh fresh Oregano
2 Tbsp fresh Rosemary
2 Tbsp fresh Mint
1 Tbsp Dijon Mustard
2 Tbsp Salt
2 Tbsp Black Pepper
1/2 Tbsp Cardamom
1 french shallot
Olive Oil


With a sharp knife, insert the 4 garlic cloves inside the leg of lamb.
Combine the minced garlic with the lemon zest, shallot, oregano, rosemary, mint, mustard, salt and pepper and cardamom and use it as a Rub for your lamb. Make sure you rub it well. Leave it to marinate in the fridge between 1 and 3 hours.
Preheat your Kamado Joe at high temperature and grill all faces for 2-3 minutes until it has a nice color. Low down heat at 325 degrees and leave it for 35-40 minutes or until meat is 140-150 degrees.
Once its ready, pour olive oil on the Leg of Lamb.
You can serve with sour cream in which you would add lemon zest and garlic, or just a typical tzatziki sauce.
