Lawry's lemon pepper
King mackerel fresh or any firm salt water fish. Fillet (no skin or bones), sprinkle heavily with lemon pepper. In a bowl, melt the salted butter, zest a lemon and add finely cut fresh dill.
Add pecan wood chips to coals, add fish and baste regularly with the butter mixture until the fish is white and flaky.
Serve with dirty rice, grilled vegetables or a salad, grilled french bread and a good Chardonnay wine.
