Meat Lamb


- leg of lamb, deboned, 5-6 lbs
- Dijon mustard, 1 1/2 tbsp
- plain breadcrumbs, 1 tbsp
- vegetable oil, 2 tbsp
- fresh mint chopped, 1 tbsp
- fresh parsley chopped, 1 tbsp

- rasberry jam or spread, 3 tbsp
- mixed nuts chopped, 3 tbsp
- plain breadcrumbs, 1 tbsp
- onion chopped, 1 tbsp
- fresh mint chopped, 2 tbsp
- fresh parsley chopped, 2 tbsp
- salt, pepper


- Mix stuffing ingredients and let rest 30 minutes
- Add stuffing in leg of lamb
- Close the meat and tie with string to roast
- Heat the oil in large pan on high setting
- Sear roast on all sides
- Remove from heat and let rest a few minutes
- Brush mustard over the roast and sprinkle the breadcrumbs, mint, and parsley
- Season to taste
- Roast for 50 minutes at 400F or until center reaches 150F
- Remove meat from oven and let rest for 8-10 minute, loosely covered with foil
- Slice and serve
- Can be accompanied with rice and seasonnal vegetables; presents and tastes great on a ratatouille bed
- Requires a strong Shiraz to truly appreciate the fine dining
