Canadian Rack Of Pork

Ingredients

Brine:
2 cups apple cider
2 cups water
1/2 cup brown sugar
8 unpeeled crushed garlic cloves

Seasoning Blend:
2 tbsp mild chili powder
1 tbsp paprika
1 tbsp brown sugar
3/4 tsp dry mustard
1/2 tsp garlic salt
1/2 tsp coarse ground black pepper
1/2 tsp sea salt

Red Pepper Glaze:
1/2 cup red spicy red pepper jelly
1 tbsp apple cider vinegar

Instructions

1) Combine brine ingredients in saucepan, boil, remove from heat to cool for at least 8 hrs
2) Place pork in sealable plastic bag, add brine, close, refrigerate for 6-12 hrs
3) Heat Kamado Joe with deflector plate and apple wood chips to 250F
4) Combine seasoning blend
5) Remove pork from brine, lighly pat dry, sprinkle with seasoning blend
6) Cook until internal temp reaches 135F ~1.5hr
7) Combine glaze ingredients, mix…may need to warm in saucepan to facilitate mixing
8) Remove pork from Kamado Joe, brush with glaze
9) Cook until temp reaches 145F ~30mins
10) Remove from Kamado Joe, let rest for 10 minutes before serving
