2.5 lbs ground brisket w/ fat (80/20 can substitute)
.5 lbs breakfast sausage
1.5 lbs ground chicken or turkey
1 cup bread crumbs
1 TBS Worcestershire
4 TBS diced dried onion
2-3 TBS BBQ seasoning (I use Tex Joy)
2 tsp fresh ground pepper
3 TBS Heinz 57
1 package bacon (thin is fine)
Mix all in big bowl except bacon, half mixture and make two loaves, put in roasting tray. You can use foil over the grate.
Layer bacon on each loaf to cover, cook 350-375 until internal is 150, Remove, let sit and rest for 10 minutes. Eat best meatloaf you ever had. You don’t need ketchup or anything else when enjoying and smokey balanced mouthful.
