For the salmon:
Fresh Salmon with skin on or off, I prefer on.
2 tbsp butter
1/2 cup brown sugar
1/4 cup bourbon. I use Crown Royal. I really like the taste and smell of it cooking.
10 med sized potatoes skins off
1/2 small onion
1-2 cups crab meat
1/3 cup green onions
1/2 cup Italian Vinaigrette, I make my own but you can use store bought.
salt and pepper to taste.
Bring potatoes to a boil, once tender remove from heat and drain. Once drained return back to stove on low heat and add all the other ingredients. Using a fork to somewhat crush the potatoes and ingredients together, but you don’t want them mashed, but still lumpy.
Season salmon with sea salt. Heat skillet to med-high heat. Add brown sugar, butter and bourbon, mix well until its a liquid. Then add the salmon and cook for a few minutes each side while spooning the sauce over the top.
