Controlling the Temperature of Your Ceramic Grill
Learning to reach your desired temperature is something you will become familiar with in a very short time. It is all about having enough charcoal and learning to adjust the air flow.
Grill set up and temperature instructions:
Charcoal
Build a mound of charcoal that starts just below the holes in the side of the fire box with the peak of the mound just below the top of the fire ring. Build the mound with large chunks at the bottom and smaller ones as you move up. Dumping charcoal directly from the bag into the grill will increase the time it takes for the charcoal to get up to temperature. Placing the charcoal keeps small pieces from blocking the air holes in the fire grate.
The first rule of charcoal: "You can never have too much charcoal, but you can have too little".
Lighting
- Light the charcoal with a fire starter cube or two, chimney starter or electric starter. Avoid using combustible liquids like lighter fluid, gas or kerosene, because it will impart a bad taste to your food.
- Open the bottom draft door fully and leave the dome up.
- Wait 8-10 minutes for the charcoal to build a small bed of embers.
Temperature
- Close the dome and fully open the top vent.
- When the temperature is 25°F from your target temperature, close the top down so it is about half open.
- Close more of the top vent to lower the temperature and open it to increase the temperature. A .25" change can effect the temperature by as much as 25°F.
